It’s Easy Being Cheesy

Homemade breads are the best! These cheese biscuits are light, moist, buttery, and simple to make. They go well with soups and salads. Use the leftover biscuits to make crunchy croutons or egg sandwiches the next morning. Makes 12 biscuits.

  • 2 cups self-rising flour
  • 1 teaspoon baking powder
  • 1 teaspoon sugar
  • ⅓ cup butter or shortening
  • ¾ cup cheddar
  • 1 cup buttermilk
  • salt to taste
  • ¼ stick butter, melted
  1. Preheat oven to 350 degrees.
  2. In a medium bowl, sift flour, baking powder, salt, and sugar. Using an electric mixer, cut in butter or shortening to dry ingredients and mix until it resembles course cornmeal. Stir in buttermilk just until blended. Add cheese. Do not over mix.
  3. Use an ice cream scoop to drop dough onto a parchment lined baking sheet. Brush dough with melted butter. Bake for 12 - 15 minutes.
