Bula! Banana Bread

When I lived in Fiji, there was always a loaf of banana bread in the bure. It was moist, sweet, and had lots of flaky coconut in it. I also like to add chocolate chips and walnuts to my concoction. Simple to make and perfect for afternoon tea in your own little paradise (wherever that may be).

Ingredients
  • 4 ripe bananas, mashed
  • ¼ cup melted butter
  • ¾ cup sugar
  • 1 egg, beaten
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • pinch of salt
  • 1½ cups all-purpose flour
  • 1 cup shredded coconut
  • 1 cup chocolate chips
  • 1 cup walnuts
Instructions
  1. Preheat the oven to 350 degrees. In a large mixing bowl, mix butter into the bananas. Add the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and combine.
  2. Mix in the flour. Gently stir in coconut, chocolate chips, and walnuts. Pour mixture into a buttered loaf pan.
  3. Bake for 65 minutes or until wooden skewer inserted into the middle comes out dry. Cool on a rack. Remove from pan and serve. Pair with tea.
